A REAL SEA BURGER

3/4 lb. fish fillets or shrimp or scallops 1 1/2 C. Stove Top stuffing 2 Tbsp. grated onion 1 beaten egg | Lightly saute fish, then cut into small chunks or dice it but don't flake it up fine like for a fish cake. In a bowl, mix the stuffing mix according to instructions, then add onion and egg; mix well. Add fish and roll into 4 balls, then flatten balls into nice firm patties. Grill the sea burgers over an open fire or saute 5 minutes each side in butter or vegetable oil, should be nice and brown. Serve on a toasted bun with tartar sauce, ketchup is o.k. too (for hot mouths, a little Tabasco or Louisiana hot sauce is in order). |

1 tin ackee 1/2 lb. salted cod fish 1 onion, chopped Black pepper to taste | Bring fish to boil to remove some of the salt. Test for saltiness. Cook fish with ackee and black pepper. |

1 C. soy sauce 1 C. lime juice 1 C. vinegar 1 C. oil 2 tsp. pepper 2 tsp. salt 1 tsp. garlic powder 1 tsp. Lawrys season salt 1/4 C. sesame seeds 1 clove garlic, minced | Marinate fish for at least one hour before cooking. Serves 30. |

ALOHA SEAFOOD DISH

2 lbs. fish fillets 1/2 C. pineapple juice 1/4 C. steak sauce 1 tsp. salt Dash of pepper | Place fish in single layer in shallow baking dish. Combine remaining ingredients and pour over fish. Let stand 30 minutes, turn once. Remove fish, reserving sauce for basting. Place fish on Pam sprayed broiler pan. Broil about 4 minutes, brushing with sauce. Turn carefully and brush with sauce. Broil until fish flakes when tested with fork. Garnish with lime wedges or pineapple if desired. |

1 or 2 bluefish fillets 3 Tbsp. lemon juice 1 1/2 C. sour cream or yogurt 4 Tbsp. chives, chopped 1/2 C. mayonnaise | Dry fillets. Mix all other ingredients and pour over fish in buttered casserole. Bake at 350 degrees for 20 minutes. |

Fillet fish and cut in bite size pieces. sliced onions Soaking Brine: 3/4 C. salt 1/2 gallon water BRINE: 2 C. vinegar 1/2 C. sugar 1/2 C. white wine (dry) 1/4 C. lemon juice 2 bay leaves 1/2 tsp. whole black peppercorn 1/2 tsp. whole allspice 2 tsp. mustard 4 whole cloves | Soaking Brine: Soak in brine of 3/4 cup salt and 1/2 gallon water, cover and stand 48 hours (2 days). Then wash and drain. BRINE: Boil for 3 minutes. Cool real well. Pour over fish and sliced onions. Put in refrigerator. Can be used in 5 days. Can use small northerns. |

1 C. flour (bread) 1 tsp. salt 3/4 C. cold water 1/2 tsp. baking powder | Mix up flour, salt, cold water, cover and let stand 30 minutes. Then add baking powder. Dip fish in, then deep fry at 375 degrees for 5 to 6 minutes. |

AUSTRALIAN FISH

1/2 lb. fresh mushrooms 2 Tbsp. butter 1 Tbsp. oil 1/2 C. parmesan, cheddar or cheshire cheese, freshly grated 1 1/2 lbs. fillet of sole (or any white fish) 1/4 tsp. salt 1/4 tsp. pepper 4 Tbsp. green pepper, chopped 6 Tbsp. white wine 2 tsp. fresh lemon juice 1 Tbsp. fresh parsley, chopped | Melt butter in skillet over low heat. Add mushrooms and saute over medium heat until tender. Rub oil over shallow 4-quart baking dish and sprinkle with grated cheese. Place fish on cheese. Sprinkle fish with salt and pepper. Add onions and top with mushrooms. Pour wine over fillets. Bake at 450 degrees for 20 minutes or until fish flakes. Sprinkle with lemon juice and parsley. |

1 lb. cooked lobster meat 1 tsp. salt 1/2 tsp. paprika 1/8 tsp. nutmeg 1/4 C. melted butter or margarine 1 pt. milk 1 pt. heavy cream Fresh chopped parsley | 1. Cut lobster into small pieces. 2. Add seasonings and lobster meat to the butter. Heat butter/lobster mixture over medium heat. 3. Add milk and cream and bring it ALMOST to a boil. 4. Garnish with parsley on the top. |

2 Tbsp. oil 2 cloves chopped garlic 2 C. peeled tomatoes 2 1/2 C. water 1/2 C. chopped onion 2 tsp. curry powder 1/2 tsp. Tabasco 1 lb. skinless cod, cut into 1" cubes | Heat oil, add onions and garlic. Cook 5 minutes. Add curry and cook 1 minute. Add tomatoes, Tabasco and water. Simmer 15 minutes. Add cod and cook 5 minutes. |
